Mother’s Day Mushroom, Spinach + Feta Omelet Recipe

A home-cooked meal is a special way to show mom your love and gratitude, and Breakfast in Bed is guaranteed to start her Mother’s Day off right.

What better way to wake up to a freshly-brewed cup of coffee and a delicious, satisfying breakfast? One of our favorite breakfast dishes is our shiitake mushroom, spinach and feta cheese omelet that will make mom smile. We recommend serving the omelet on a fancy plate with fresh cut fruit and a bagel, toast or pastry of choice.

Place the completed meal on a nice tray complete with beautiful flowers and a decorated card because nothing touches mom’s heart more than everything homemade.

Mother’s Day Mushroom, Spinach + Feta Omelet Recipe

Ingredients:

  1. 4 Shiitake Mushrooms – sliced
  2. 2 Eggs or Egg Whites
  3. 1 Cup of Spinach – chopped
  4. Feta Cheese – ½ ounce or based on preference
  5. Salt and pepper to taste
  6. 1 scallion – diced
  7. Feel free to add bacon or sausage!

 

Instructions:

  1. Clean mushrooms by wiping them with a paper towel
  2. Coat a small non-stick pan with butter or non-stick spray of choice – we prefer avocado
  3. Add mushrooms and cook until softened
  4. Add spinach and cook until wilted
  5. Add salt and pepper
  6. Set aside mushrooms and spinach on a separate plate
  7. Whisk the eggs in a small bowl with salt and pepper
  8. Repeat step #2
  9. Pour whisked eggs into the pan and cook over low heat – do not stir them.
  10. Once the eggs are almost cooked on one side, carefully flip the eggs over
  11. Add the mushrooms, spinach and feta (add the bacon and sausage at this point too)
  12. Fold the other half over and sprinkle with additional feta.
  13. Garnish with diced scallions.
  14. Enjoy!
