Mother’s Day Mushroom, Spinach + Feta Omelet Recipe
A home-cooked meal is a special way to show mom your love and gratitude, and Breakfast in Bed is guaranteed to start her Mother’s Day off right.
What better way to wake up to a freshly-brewed cup of coffee and a delicious, satisfying breakfast? One of our favorite breakfast dishes is our shiitake mushroom, spinach and feta cheese omelet that will make mom smile. We recommend serving the omelet on a fancy plate with fresh cut fruit and a bagel, toast or pastry of choice.
Place the completed meal on a nice tray complete with beautiful flowers and a decorated card because nothing touches mom’s heart more than everything homemade.

Mother’s Day Mushroom, Spinach + Feta Omelet Recipe
Ingredients:
- 4 Shiitake Mushrooms – sliced
- 2 Eggs or Egg Whites
- 1 Cup of Spinach – chopped
- Feta Cheese – ½ ounce or based on preference
- Salt and pepper to taste
- 1 scallion – diced
- Feel free to add bacon or sausage!
Instructions:
- Clean mushrooms by wiping them with a paper towel
- Coat a small non-stick pan with butter or non-stick spray of choice – we prefer avocado
- Add mushrooms and cook until softened
- Add spinach and cook until wilted
- Add salt and pepper
- Set aside mushrooms and spinach on a separate plate
- Whisk the eggs in a small bowl with salt and pepper
- Repeat step #2
- Pour whisked eggs into the pan and cook over low heat – do not stir them.
- Once the eggs are almost cooked on one side, carefully flip the eggs over
- Add the mushrooms, spinach and feta (add the bacon and sausage at this point too)
- Fold the other half over and sprinkle with additional feta.
- Garnish with diced scallions.
