Creamy Mushroom Thai Soup Recipe

Our favorite way to warm up is always a bowl of piping hot, delicious soup. Whether it’s creamy or broth-based, we love just about any soup! But when it comes to creating our favorite, unforgettable soup recipes, mushrooms are always the star!

A bowl of our Creamy Mushroom Thai Soup is everything you need to feel satisfied and fulfilled. This soup has tons of tangy, salty, earthy and sweet flavors with tantalizing aromas that fill the room. It’s also very light, yet incredibly satisfying.

So throw on your comfy sweats, ignite a fire, and get cozy with this delicious Creamy Mushroom Thai Soup.

Creamy Mushroom Thai Soup Recipe

Ingredients:

  • 8 oz. of thinly sliced Shiitake or Oyster mushrooms
  • 1 lb. of chicken breasts, bite-sized pieces or shrimp (optional)
  • ½ of thinly sliced white onion
  • 2 cloves chopped garlic
  • 1 tablespoon coconut oil
  • Minced ginger
  • 1 lemongrass stalk pounded with the side of a knife and cut into 2-inch long pieces
  • 2 teaspoons red thai curry paste
  • 1 tablespoon diced jalapeno (based on heat preference)
  • 4 cups of chicken stock – we use Chicken Bouillon
  • 3 cans unsweetened coconut milk
  • 1 tablespoon brown sugar
  • 1 ½ – 2 tablespoons fish sauce
  • 2-3 tablespoons fresh lime juice
  • 2-3 sliced thin green onions
  • Fresh chopped cilantro for garnish

Instructions: 

  • Heat the coconut oil in a medium pot over medium heat
  • Add the onion, garlic, jalapeno, ginger, lemongrass, red curry paste and cook
  • Stir frequently for a few minutes or until the onions are softened.
  • Add chicken broth, bring to a boil.
  • Reduce heat and simmer uncovered for 30 minutes.
  • Strain out the garlic, onions, lemongrass, ginger and remove.
  • Add the coconut milk, chicken breast or shrimp, and mushrooms.
  • Simmer until chicken breast or shrimp pieces are cooked.
  • Add fish sauce, brown sugar, and lime juice to taste.
  • Cook another 1-2 minutes.
  • Serve and top with green onions, fresh cilantro, slices of lime and maybe even a hot pepper on top (all optional).
