Mushroom Ramen Noodle Soup Recipe

Mushroom Ramen Noodle Soup Recipe

Ingredients:

  • 8 ounces sliced oyster or shiitake mushrooms
  • 4 ounces of ramen noodles
  • 3 cloves of minced garlic
  • 1 diced jalapeno
  • 2 cups sliced bok choy
  • 3 sliced scallions
  • 2 julienned carrots
  • 1 tsp. sesame oil
  • 2 tsp. avocado oil
  • 4 cups of chicken broth (or vegetable broth)
  • 1 tablespoon Sriracha or hot pepper flakes to taste
  • 2 tablespoons soy sauce
  • ½ lime
  • Cilantro

Instructions: 

  • Heat avocado oil to medium-high heat and sauté mushrooms until golden. Set aside.
  • Add sesame oil to a large pot on medium heat.
  • Add jalapeno, bok choy and green onion; sauté until tender.
  • Add the garlic and cook until fragrant.
  • Add broth, soy sauce, and Sriracha.
  • Stir, turn to high heat to bring broth to a boil.
  • Add ramen noodles; cook until tender.
  • Add Sriracha or hot pepper flakes for a little heat if you like it spicy.
  • Serve in a bowl and top with scallions, cilantro, and any extra toppings that appeal to you!
  • Squeeze lime juice to taste (we use ½ of a lime)
