Buffalo Chicken Stuffed Shiitake Mushrooms

Ingredients:

  • Shiitake Mushrooms (10) – remove the stems and insides
  • 1 pound of cooked, shredded chicken
  • 2 ounces of cream cheese
  • ½ cup of shredded cheddar cheese
  • 1 teaspoon olive oil, or as needed
  • 2 diced celery stalks
  • ¼ cup buffalo wing sauce
  • ¼ cup blue cheese dressing
  • ¼ cup ranch dressing
  • Diced scallions or chopped parsley for garnishing

Directions:

  • Preheat oven to 350 degrees.
  • Open mushrooms and arrange face up in a baking dish
  • Heat olive oil in a skillet over medium heat
  • Add diced celery and cook until tender
  • Add wing sauce, cream cheese, blue cheese dressing, ranch dressing to the skillet
  • Stir until the cream cheese is melted and the buffalo sauce is smooth
  • Add chicken and mixture together until the chicken is coated
  • Spoon the chicken mixture into the mushrooms and sprinkle cheddar cheese on top
  • Bake in the oven until the cheese is melted for approximately 20 minutes
  • Garnish with scallions or parsley
